Foul (Fava Beans with Olive Oil)

Our Recipe Card Foul (Fava Beans with Olive Oil) 30 min 4 servings Ingredients 2 540ml Cans Fava Beans 1/2 Cup Olive Oil 1 Clove of Garlic 1 Chopped Tomato 1 Chopped Parsley Bunch Salt Lemon Juice 1teaspoonSalt 30ml Lemon Juice Preperation Rinse the canned fava beans. Pour the Fava beans into a pot and add enough water to cover. Bring the beans to a boil on the stove. Once boiled place the beans in a bowl and mix in the olive oil, cumin, salt, and lemon juice. After mixing well, garnish with tomatoes and parsley.

Hummus (Chickpea Dip)

Peel and ensure all skin is removed. Blend all the ingredients together until all ingredients finely integrated.

Lentil Soup

Our Recipe Card Lentil Soup 30 min 4 servings Ingredients 500g Lentils 50ml Extra Virgin Olive Oil 1 Chopped Onion 2 Crushed Clove of garlic 1 tsp.Dried mint 1 tsp.Salt 40ml Lemon Juice Preperation Place the lentils in a pot and pour water until the lentil are covered. Bring the water to a boil. Simmer the lentils in the pot until the lentils are tender. Saute the onion and garlic until crispy golden. Add to the soup in addition to the other ingredients during the last 5 minutes of cooking.

Chicken Soup

Bring the pot to a boil and skim off the foam. Reduce the heat, then simmer the covered pot until the chicken is tender (about 30 minutes)

Chickpea Soup

Our Recipe Card Chickpea Soup 30 min 4 servings Ingredients 1/2 cup Dry Chickpeas soaked overnight 10 cups Water 1/2 cup Rice 1 Chopped onion 1 Chopped potato 2 Chopped tomatoes 2 tsp. Tomato paste 50ml Extra virgin olive oil 1 tsp. Salt 0.5 tsp. Pepper 1/2 cup Rice 1 Chopped onion 1 Chopped potato 2 Chopped tomatoes 2 tsp. Tomato paste 50ml Extra virgin olive oil 1 tsp. Salt 0.5 tsp.Pepper Preperation Combine soaked chickpeas and water and bring to a boil. Reduce the heat, and simmer until the chickpeas are tender (about 30 minutes). Add the rice, tomatoes and tomato paste. Saute the finely chopped onion in the oil until the onions are golden. Add to the soup and season it salt and pepper.

Vegetable Soup

Salt 1 tsp. Pepper 1 tsp. Ground ginger 2 tbsp. Butter Preperation Bring the water to boil in a pot. Add the chopped vegetables and tomato juice. Reduce the heat and simmer for 15 minutes. During the last five minutes of cooking, add the salt, pepper, ginger, and butter.

Whole Wheat Soup

Our Recipe Card Whole Wheat Soup 30 min 4 servings Ingredients 1 lb. Beef Shanks 2 tsp. Salt 3 Beef Soup Bones 12 cups Water 2 cups Whole wheat grain 2 Dried bay leaves 2 tsp. Salt Preperation In a pot, combine the beef shanks, bones, and water. Bring to boil and skim off the foam. Reduce heat. Add the whole wheat grain and bay leaves. Simmer (covered) for 2 hours until the meat and whole wheat are tender. During the last five minutes of cooking add the salt. Remove the bones before serving.
