Lentil Soup

Ingredients

  • 500g Lentils
  • 50ml Extra Virgin Olive Oil
  • 1 Chopped Onion
  • 2 Crushed Clove of garlic
  • 1 tsp.Dried mint
  • 1 tsp.Salt
  • 40ml Lemon Juice

Preperation

Place the lentils in a pot and pour water until the lentil are covered. Bring the water to a boil. Simmer the lentils in the pot until the lentils are tender. Saute the onion and garlic until crispy golden. Add to the soup in addition to the other ingredients during the last 5 minutes of cooking.
